Lemon Stuffed Fish Fillets

INGREDIENTS

1 pk Chicken flavor stuffing mix
1 2/3 c Water
1/4 c Butter or margarine
6 Flounder or sole fillets fresh or frozen; thawed if frozen
1 tb Lemon juice
Paprika
1 tb Butter or margarine

INSTRUCTIONS

Combine contents of 1 vegetable seasoning packet and water in medium
saucepan. Add 1/4 cup butter. Bring to a boil. Reduce heat; cover and simer
5 minutes. Add contents of 1 stuffing crumb packet; stir to moisten. Cover;
remove from heat and let stand 5 minutes.
Sprinkle fish fillets with 1 teaspoon of the lemon juice. Place 1/3 cup
prepared stuffing on each fillet and roll loosely to enclose stuffing.
Place seam side down in buttered baking dish and spoon remaining stuffing
around fillet rolls. Sprinkle top of fillets with remaining lemon juice and
paprkia; dot with 1 tablespoon butter. Bake at 375 about 20 minutes or
until fish flakes with a fork.
