INGREDIENTS

500 g King Edward or Maris Piper potatoes; cooked and mashed
; (1lb)
375 g Cod or haddock fillet; cooked, skinned and
; flaked (12oz)
2 tb Freshly chopped parsley
Grated rind and juice of 1/2 lemon
2 Eggs; size 3
Salt and freshly ground black pepper
25 g Plain flour; for shaping (1oz)
125 g Fresh wholemeal breadcrumbs; (4oz)
Oil for frying
Lemon wedges and tartare sauce

INSTRUCTIONS

TO SERVE
Mix together the potato, fish, parsley, lemon, 1 egg yolk and seasoning to
taste. Chill the mixture for easier handling.
Shape the mixture into 8 ''sausage'' shapes using well floured hands.
Beat together the remaining egg and egg white and use to coat the shapes.
Coat evenly with the breadcrumbs, then fry in batches in a little oil for
6-8 minutes, turning occasionally until crisp and golden. Drain on kitchen
paper and serve immediately with lemon wedges and tartare sauce.
