Lentil Marinara Over Pasta

INGREDIENTS

1 Onion, chopped
2 Garlic cloves, crushed
2 Carrots, coarsely grated
2 Celery stalks, chopped
3 T Olive
2/3 c Red lentils
1 Chopped tomatoes, 14 oz.
2 T Tomato paste
2 c Vegetable Broth
1 T Fresh chopped marjoram, or
1 teaspoon
Marjoram
Salt and Frontier ground
black pepper

INSTRUCTIONS

In a large saucepan, gently fry the onion, garlic, carrots and celery
in the oil for about 5 minutes, until they are soft. Add the lentils,
tomatoes, tomato paste, broth, marjoram and seasoning.   Bring the
mixture to a boil then partially cover with a lid and simmer for 20
minutes until thick and soft. Serve over pasta, and use the marinara
