Lentils and Rice

INGREDIENTS

1 lg Onion; coarsely chopped
1 tb Oil
1 c Lentils (sorted and washed)
1 c Brown rice
3 c Boiling water
1 ts Cumin seed -or-
1 ts Cardamon seed; crushed
1/4 ts Black pepper; crushed
1 Bay leaf; crushed
1 ts Salt (optional)
1 Stick cinnamon (1-inch piece)

INSTRUCTIONS

Saute onions in oil in large saucepan until they are brown.  Add spices
and saute for a few seconds. Add 1 cup lentils, 1 cup brown rice. Add 3
cups boiling water. Cover and simmer until rice and lentils are tender
(about 1 hour). You may need to add water, depending on the kind of rice
used.
Serve hot or cold.  Good in pita dressed with hot sauce, soy sauce or
whatever.
