Light Egg Nog

INGREDIENTS

4 c Skim milk
1 c Egg Beaters Real Egg Product (I only used 1/2 cup Egg Beaters)
1/4 c Sugar -or-
6 pk Equal or Sweet One artificial sweeteners
1/2 c Pudding mix, instant vanilla or-
3 tb Sugar-free instant vanilla pudding mix
2 ts Vanilla extract (up to 3) (I used 1 1/2 t vanilla; 1/2 t rum extract; and 1/2 t brandy extract)
1/2 ts Ground nutmeg

INSTRUCTIONS

(Adapted from Fat-Free Holiday Recipes by Sandra Woodruff, RD) This
rich-tasting version has none of the fat of regular eggnog.
Place all of the ingredients in a blender, and blend for 30-60 seconds, or
until smooth. Chill for several hours.
Shake or stir eggnog well to blend before serving. Serve in glasses or mugs
with an additional sprinkle of nutmeg.
