INGREDIENTS

1 lb Fresh greens
Sesame oil, for saute
Sesame seeds, toasted
1 ds Tamari

INSTRUCTIONS

Rinse fresh greens several times. Cut stems away from leaves; chop
stems and leaves into bite-sized pieces. Saute greens in a small
amount of sesame oil, or saute in broth. This takes about 10 to 15
minutes. Top with toasted sesame seeds and serve with a dash of
tamari. This method will retain a much greater nutritional value and
the taste is still great. This is a lighter version of a longtime
Southern favorite. Chitwood's Southern-Style Diabetic Cooking will be
