Loin Roast with Smoky Barbecue Sauce

INGREDIENTS

1 Tendersweet loin roast
25 g Butter; (1oz)
1 Onion; chopped
1 Clove garlic; crushed
2 tb Red wine vinegar
1 tb Lemon juice
2 tb Tomato puree
2 tb Dark brown soft sugar
2 tb Worcestershire sauce
2 ts Dried mustard powder
1 ts Clear honey
1/2 ts Chilli powder
Salt and freshly ground black pepper

INSTRUCTIONS

1. Cook the loin roast following the guidelines on the pack.
2. Meanwhile, in a saucepan, melt the butter, add onion and garlic and cook
for 5 minutes until softened.
3. Add remaining ingredients, 150 ml (1/4 pint) water and seasoning to
taste.
4. Bring to the boil, reduce heat and simmer for 10 minutes, stirring
occasionally
