INGREDIENTS

1/2 c Madeira
1/2 ts Thyme
1/2 c Chicken stock OR low-sodium chicken broth
1/4 c Cream
2 tb Butter
Salt and pepper; to taste

INSTRUCTIONS

Here's a simplified recipe for Madeira Sauce. Serve it with roast meat,
such as Beef Wellington. COMBINE MADEIRA, THYME AND STOCK in a saucepan
over medium heat and cook until reduced by about half. Add the cream and
continue to cook until the liquid becomes saucelike. Remove from the heat,
beat in the butter and add salt and pepper. Makes 1/2 Cup
