Magic Muffins

INGREDIENTS

1 1/4 c All-purpose flour
3/4 c Malt-O-Meal Quick hot cereal; dry
1/2 c Sugar
3/4 c Milk
1/4 c Vegetable oil
1 Egg
1 tb Baking powder
1/2 ts Salt

INSTRUCTIONS

Heat oven to 400°F. In a large bowl, combine all ingredients; stir together
until ingredients are just moistened. Spoon into greased or paper-lined
12-cup muffin pans filling cups 3/4 full. Bake for 18 to 20 minutes or
until toothpick inserted in center comes out clean.
Yield: 12 muffins.
Variations:
Malt-O-Meal Maple & Brown Sugar Flavor or Apple & Cinnamon Flavor may be
substituted for Malt-O-Meal Quick hot cereal. Tip: For moister muffin add
1/2    cup applesauce.
STREUSEL: Combine 2 tablespoons of sugar, 1 tablespoon Malt-O-Meal Quick
hot cereal, dry, 1/4 teaspoon cinnamon and 1/4 teaspoon nutmeg. Sprinkle
mixture on muffins. Bake as directed above.
BLUEBERRY: Add 1/2 cup blueberries to batter.
COCONUT: Add 1/2 cup coconut to batter.
CORN BREAD: Add 1 can (8.5 ounce) cream style corn to batter. Pour into
greased, 13x9-inch pan and bake for 18 to 20 minutes.
POPPY SEED: Add 1 tablespoon poppy seed to batter.
BANANA: Add 3/4 cup mashed banana to batter.
