Mandarin Orange Muffins

INGREDIENTS

2 1/4 c Oat-bran cereal
1 tb Baking powder
1/4 c Chopped walnuts
1/4 c Brown sugar
1 1/2 c Skim milk or evaporated skim milk
1/4 c Mandarin juice from can
2 Egg whites
2 tb Vegetable oil
1 sm (1 cup) can of mandarin oranges

INSTRUCTIONS

I just made these for my DH and family. They use oat bran which is supposed
to decrease cholesterol in your system. :) These are variations of the
basic recipe found in the 8-week Cholesterol Cure book.
Preheat oven to 425 deg. In a large bowl, mix together the first 4
ingredients. Mix the next 4 ingredients in a bowl or blender. Add to the
dry mixture and mix. Mix in the oranges. Line muffin tins and fill with
batter. Bake 15-17 minutes. Makes 12 muffins. Store in refrigerator if not
eaten in 3 days.
Stats should be about the same as the Apple Cinnamon muffins.
