Mandarin Salad

Grains Swiss 6 Servings

INGREDIENTS

1 Head red leaf lettuce
1 bn Fresh spinach
1/3 c Chopped green onion
1/2 c Chopped celery
1/4 c Chopped parsley
1 11-oz can mandarin oranges
Slivered almonds, chopped walnuts, pinenuts, if desired (one)
1/2 c Olive oil
1/4 c Tarragon vinegar
2 tb Sugar
1/2 ts Worcestershire
1 ts Salt
Freshly ground pepper to taste

INSTRUCTIONS

DRESSING
Here's a nice little salad (I believe it's from the Private Collection
cookbooks done by the Jr. League of Palo Alto, CA) that my sister served on
New Year's Eve a few years back and which has always been well received
when I have made it.
Wash lettuce and tear (don't use knife to avoid browning) into bite-sized
pieces. Wash spinach and trim stems. Combine with ingredients through
mandarin oranges. Just before serving toss with dressing and garnish with
one of the above nuts, if desired.
Dressing: Whisk ingredients together.
