INGREDIENTS

2 c Pulp of ripe mangoes
1 c Sugar *
1/2 ts Citric acid

INSTRUCTIONS

* (increase to 1 1/3 cup if pulp is sour and slightly underripe).
Wash mangoes thoroughly. Peel skins and scrape pulp from the seeds bu using
a stainless steel spoon. Process in a blender or food processor until
uniform in texture. Measure pulp and combine with sugar. Cook in a heavy
saucepan, constantly stirring with a wooden spoon until it is thick enough
to be spooned out when lifted from the pan. Place in warm, sterile jars and
seal at once.JM.
