INGREDIENTS

1 Ripe yet firm mango; peeled, cut from pit, and finely diced
1 Tomato; finely diced
1/2 Red onion; finely chopped
1/3 c Fresh lime juice
1 Serrano chile; minced
1/2 ts Dried oregano
2 tb Minced fresh cilantro
1 ts Sea salt

INSTRUCTIONS

Makes 1 cup
This is indispensable with our Plantain Torte (page 28, see recipe)
in a small bowl, toss all of the ingredients together. Store in an airtight
container in the regrigerator for up to 2 days.
Variations: Add 1/2 cup diced peeled jicamam or 1/2 cup fresh corn kernels.
Also try it with 1/2 roasted banana in place of the tomato.
