Maple Apple Muffins

INGREDIENTS

2 Eggs, beaten
1/2 c Margarine – becel light, or butter
1 c Maple syrup, 100% Pure
1 1/2 c Apples, peeled, diced
3 c Flour
1 tb Baking powder
1 ts Salt
1 ts Cinnamon
1 ts Nutmeg

INSTRUCTIONS

Preheat oven to 350. Cream eggs and margarine in a bowl until light and
fluffy. Add Maple Syrup and apples. Mix well. Sift in dry ingredients. Stir
until moistened. Put into greased muffin tins. Bake 20 to 25 minutes.
NOTES : Original recipe says it will make 12 medium muffins - I made 16.
The batter is very thick. The eggs and margarine really don't go "light and
fluffy".
