The Laura Secord Canadian Cook Book (a candy company named after a local
hero) has two good maple candy recipes:
Bring to a boil and cook without stirring until a drop in cold water
separates into pliable threads. (285 degrees F).  Turn into a buttered
8-inch square pan. Mark into squares while still soft. Break when cold.
