Maple-glazed Pork With Apples

INGREDIENTS

1/3 c Maple syrup
1 T Spicy brown mustard
1/4 t Salt
1/4 t Pepper
1/4 c Dry breadcrumbs
4 Pork cutlets, 4-ounce
2 t Olive oil
1/2 c Apple cider
2 Golden Delicious apples
each cored and cut into

2 T Chopped fresh parsley

INSTRUCTIONS

Combine first 4 ingredients in a small bowl; stir well with a wire
whisk, and set aside. Place breadcrumbs in a large zip-top plastic
bag. Add pork; seal bag, and shake to coat pork with breadcrumbs.  Heat
oil in a large nonstick skillet over medium heat. Add pork, and  cook 2
minutes on each side or until golden brown. Add cider and  apple
wedges; bring to a boil. Reduce heat, and simmer, uncovered, 10
minutes or until pork is done. Add maple syrup mixture, and cook 5
minutes or until thick and syrupy. Yield: 4 servings (serving size: 3
ounces pork and 8 apple wedges).  Per serving: 389 Calories; 18g Fat
(41% calories from fat); 24g  Protein; 33g Carbohydrate; 74mg
