Maple-Pumpkin Saute

INGREDIENTS

2 tb Clarified Butter
4 c Fresh Pumpkin; peeled and cubed, (about a 1 1/2-pound pumpkin)
1 1/2 c Unpeeled Red Delicious Apple; cored and chopped
1/2 c Onion; finely chopped
1/3 c Raisins
3 tb Maple Syrup
1/4 ts Salt
1/8 ts Ground Ginger

INSTRUCTIONS

Warm the clarified butter in a heavy skillet over medium-high heat. Add the
cubed pumpkin, unpeeled apple, onion, and raisins. Cover and cook the
mixture for about 20 minutes or until pumpkin is tender, stirring
occasionally.
Stir in the maple syrup, salt, and ginger, and serve to grateful guests.
