Marbled Apricot Cheese

INGREDIENTS

250 g Dried apricots; (8oz)
150 ml Unsweetened orange juice; (1/4 pint)
1 200 gram jar fromage frais with apricots; (7oz)

INSTRUCTIONS

1. Soak the apricots with the orange juice for at least 4 hours, or
preferably overnight.
2. Bring to the boil, then simmer for 15 minutes.
3. Pur.e the apricots in a liquidiser or food processor, and leave them to
cool.
4. Put the fromage frais in a 1 pint (600ml) serving dish.
5. Spoon in the pur.e and blend in until marbled but not mixed thoroughly.
6. Serve chilled.

NOTES : Apricots are really versatile fruit. They blend well with both
sweet and savoury ingredients, and besides this, have a high fibre content.
In this dish, the tartness of the puree blends well with the ''creaminess''
of the fromage frais, to make a dessert which tastes as if it were really
rich - you will need only a small helping!
