Marsala Sauce

INGREDIENTS

1 qt Demi-glace
3 tb Shallots; minced
12 Peppercorns; coarsely ground
3 oz Marsala wine

INSTRUCTIONS

1. Combine the demi glace, shallots, & peppercorns in a sauce pan, simmer
until the mixture thickens.
2. strain the sauce through cheesecloth and put sauce in a clean saucepan.
3. add wine & simmer, adjust seasonings with salt & pepper to taste.
NOTES : YIELDS: 1 QUART; 1 LITER
