Marsha’s Potato Casserole

INGREDIENTS

10 Boiling potatoes; peeled
8 oz Cream cheese; softened
2 Eggs; beaten slightly
2 tb All-purpose flour
2 tb Fresh parsley; minced
2 tb Fresh chives; minced
1 cn French fried onions
Salt and white pepper; to taste

INSTRUCTIONS

In a mixing bowl, mix potatoes until smooth, add cream cheese, beat some
more.  Blend in eggs, flour, parsley, chives, and seasoning. Turn into
buttered casserole, spread onions on top .  Bake uncovered @ 325 degrees
for 25-30 minutes.     May be compounded ahead of time, refrigerated and
then baked.  Marsha used onions cut into rings, sauteed in butter instead
of the french fries. NOTES
: Marsha (Billie Sue's sister) fixed this for a brunch (Easter, 1996). It
was delicious!
