Mary’s Farm Sausage

INGREDIENTS

3 lb Pork shoulder; bone removed, ground
4 ts Hawaiian salt; *
1 ts Peppercorns
1/2 ts Dried thyme
2 ts Dried leaf sage; crumbled
1 sm Maui onion; grated **

INSTRUCTIONS

* or Kosher salt
** or any sweet onion
Grate onion or mince VERY fine. Combine peppercorns, salt, thyme and sage
in a spice mill and grind to a fine powder. Sprinkle onion and spices over
the ground pork and mix well. Put the mixture through a meat grinder OR put
it through a food processor, a little at a time. Cover and refrigerate
overnight This mixture can be put in casings or made into patties. This
sausage freezes very well.
