INGREDIENTS

4 1/2 lb Sweet Potatoes; (About 8-9 medium), peeled and cut into 1-inch chunks
1/3 c Butter or Margarine
1/3 c Brown Sugar; firmly packed
1 1/2 ts Salt
3/4 ts Orange Peel; grated
3/4 ts Freshly ground Black Pepper
1 1/2 tb Bourbon or Dark Rum; (optional)
Orange Slices for Garnish; (optional)

INSTRUCTIONS

The Cook & Kitchen Staff are offering you four different Thanksgiving Day
Dinner menus during November, and we're in the middle of the side dishes in
our final recipe collection featuring a "Thanksgiving Day Dinner on the
Farm."
Thanksgiving is a time of tradition, and with tradition come expectations.
When you elect to prepare a holiday feast as presented on many a farm
table, freshly harvested and mashed sweet potatoes are a necessity.
If you've ever wondered why Grandma's sweet potatoes always tasted so good
with seemingly next to nothing in them, make sure to prepare today's recipe
with just a splash of dark rum, and enjoy one of Grandma's best-kept
kitchen secrets at your holiday dinner table.
In large saucepan, place potatoes in just enough lightly salted water to
cover. Heat to boiling over high-heat setting, then reduce to medium; cover
and simmer 20 minutes or until potatoes are fork-tender. Drain well.
Return potatoes to saucepan. Mash a bit with a potato masher. Add the
butter, brown sugar, salt, orange peel, black pepper, and bourbon or rum,
if desired. Thoroughly mash potatoes until mixture is well blended. You may
elect to use a hand-held electric mixer rather than a potato masher for
extra fluffy sweet potatoes and ease of blending.
Spoon mashed sweet potatoes into serving bowl and garnish with orange
slices, if so desired. Serve warm.
