INSTRUCTIONS
Directions: To create a cone shape from the tortillas, take a large sheet
of aluminum foil and lay it out. Spray each tortilla with a light mist of
water. Wrap the tortilla around the piece of foil, creating a cone shape.
Wrap a second sheet of foil around the cone shaped tortilla. Repeat with
remaining tortillas. Bake at 300 degrees for 20-30 minutes until tortillas
hold their shape. In a mixing bowl, combine the chicken, corn, scallions,
and barbecue sauce. In a separate bowl, combine the cabbage, onion, apples,
mayonnaise and cumin. Spoon the coleslaw into the bottom of the tortilla
cone. Then spoon the chicken mixture on top of the coleslaw. Eat like an
ice cream cone..
