INGREDIENTS

2 lb Lean ground beef
1/2 lb Ground pork
1 lg Egg
1 pk (40 crackers) Cheddar Cheese Saltines
1 lg Onion; chopped
1 Green pepper; minced
1 c Chopped Dill pickles
1/3 c Worcestershire Sauce
3/4 c Ketchup
1 ts Salt

INSTRUCTIONS

Ok, guys, here's my recipe for meat loaf (and I disliked meat loaf until
this one, which I found makes wonderful meatloaf sandwiches - that is if
there's leftovers): This makes enough for 4 with plenty left over for big
sandwiches on bread spread with plenty of mayonnaise.
Preheat oven to 325 degrees. Put the meats and egg in a large bowl. Crush
the crackers finely. Mix Worcestershire with 1/2 cup of the ketchup (you'll
use the other 1/4 cup later). Sprinkle salt over meat and mix well with
your hands. Then add saltines and mix again. Then add onions, green
peppers, and pickles and mix again. Then add the Worcestershire/ketchup mix
and mix again. Put the mixture in an oblong loaf pan, patting and slapping
it into shape (this firms the meat loaf believe it or not). Put it in the
oven and bake 45 minutes. Baste with the remaining ketchup. Bake another 45
minutes. Drain any grease out and let it cool a bit before slicing so it
will hold its shape.
