Meatball Soup

INGREDIENTS

1/2 lb Ground beef
1/4 c Uncooked long-grain rice
1 Egg; beaten
1/8 ts Pepper
3 1/2 c Water
1 Envelope (1.1-oz) beefy onion soup mix
1/4 ts Dried thyme

In a large bowl, combine meatball ingredients. Shape mixture into 1-inch
meatballs and place on a cookie sheet or waxed paper; set aside.  In
saucepan, combine soup ingredients; bring to a boil. Carefully drop
meatballs into boiling soup; reduce heat and simmer, covered, for 25
minutes.
Note: You may also use groung turkey or chicken for a lighter change.  You
can also add cut-up fresh or frozen veggies if you like (whatever ones are
left over from last night's supper will work just great).
