Meatballs and Cabbage

INGREDIENTS

2 lb Ground Beef
2 Eggs
1 Garlic Bulbs — minced
1/2 c Dehydrated Minced Onion
Seasoned Bread Crumbs
1/2 Cabbage — thickly shredded
1 lg (About 1 Quart Jar) Marinara
Sauce
1 cn Jellied Cranberry Sauce

INSTRUCTIONS

Shred cabbage. Mix Sauce: Combine Marinara sauce and Cranberry Sauce. Mix
until well blended. Make meatballs: Combine meat, eggs, garlic and onion.
Mix in enough bread crumbs to be able to form meatballs. Using entire meat
mixture, form meatballs in whatever size you like. In a roasting pan, place
a little sauce in the bottom. Place a layer of cabbage in the pan, followed
by a layer of sauce to cover. Keep layering in the same order until all the
meatballs and sauce are used. Cover pan and bake at 375-degrees for about 1
hour. Delicious immediately, but even better the next day after flavors
have blended more. NOTES
: This is an easy to prepare, delicious dish. Meatballs are not browned,
they just cook in the sauce. You may substitute your own favorite meatball
recipe, using any meat or combination of meats that you like. The amount of
cabbage can be varied depending on how much you like and how much room you
have. The recipe can be multiplied many times. It's a great crowd pleaser.
You can also use homemade cranberry sauce or whole-berry sauce rather than
the canned jellied sauce. If you are interested in cutting down on sugar,
you can make homemade cranberry sauce using concentrated fruit sweetner.
Method of cooking can also vary. You can oven bake. You can microwave,
although the flavor of the sauce in the meatballs is not as intense this
way. Or you can use a crockpot or slow cooker on a medium setting for 3-4
hours or whatever time it takes. You may also use different types of tomato
based sauce to vary flavor. Experiment until you get just the right sweet
and tangy flavor.
