Meatloaf with Vegetable Stuffing

INGREDIENTS

1/2 c Canned sliced mushrooms; drained
1 c Canned carrots; drained and chopped
1 c Canned green beans; drained and chopped
3/4 oz Dried bread crumbs; (3 Tablespoons)
2 Eggs or equivalent in egg substitute
16 oz Ground turkey or beef; (90 % lean)
1/2 c Chopped onion
1 1/2 oz Rolled oats; (1/2 cup)
1 tb Worcestershire sauce
1/4 c Catsup
1/4 ts Pepper
1/2 ts Garlic powder

INSTRUCTIONS

Preheat oven to 375 degrees. In medium bowl combine mushrooms, carrots,
green beans, bread crumbs and 1 egg. Set aside. In large bowl combine meat,
onion, oats, remaining egg. Worcestershire sauce, catsup, pepper and garlic
powder. Spread half of meat mixture in bottom of ungreased 9 x 5 loaf pan.
Cover with vegetable mixture, spreading evenly. Spread remaining meat
mixture over vegetables. Bake 45-55 minutes. Cool minutes before serving.
