INGREDIENTS

1 Potato
1 Onion
Olive oil
3 Smoked bacon rashers
1 bn Chives
Ciabatta bread
1 sl Tomato
Goats cheese
1 tb P reduced double cream
1 Tomato; roasted in oven
; with garlic, salt
; and sugar
Herb salad

INSTRUCTIONS

Finely dice the potato and poach till just cooked and cool. Chop the onion
and sweat in olive oil till soft, set aside. Chop and fry the smoked bacon
and also leave aside to cool. Mix all the above together with the chives.
Lightly fry one slice of ciabatta in olive oil. Place some slices of raw
tomatoes on top, then put 1 slice of goats cheese and pile over this the
mix of potato, bacon, onion and chives. Spoon over some reduced double
cream and put under the grill till the cheese is soft and the top is
golden.
Serve on a plate with a tomato, 1/2 baked in the oven with garlic, rock
salt and sugar and a small herb salad.
