INGREDIENTS

4 c Tomatoes, chopped
2 tb Fresh basil, chopped
3 tb Black olives, chopped
1 tb Olive oil
1 tb Red wine vinegar
1/4 ts Salt, optional
1/8 ts Crushed red pepper
1 Garlic clove, minced
4 c Angel hair pasta, cooked
1/4 c Feta cheese, 1 oz., crumbled

INSTRUCTIONS

Combine the first 8 ingredients in a bowl, and stir well. Let stand for 10
minutes. Serve the mixture at room temp. over pasta, and sprinkle with
crumbled feta cheese.
Yield: 4 servings (serving size: 1 cp tomato mixture, 1 cp pasta, and 1
Tbsp. cheese.)
Calories - 300 (23% from fat), Protein - 9.4g, Fat - 7.7g, Carb - 49.5g,
Chol - 6mg , Sodium - 348mg.
NOTES : Serve with a romaine lettuce salad with Parmesan-peppercorn
dressing and crisp breadsticks.
