INGREDIENTS

1 pk (4-serving size) Jell-O brand gelatin; any flavor
3/4 c Boiling water
1/2 c Cold water
Ice cubes
1 c Melon balls (cantaloupe; honeydew or watermelon)
Mint leaves (optional)

INSTRUCTIONS

DISSOLVE gelatin in boiling water.  Combine cold water and ice cubes to
make 1-1/4 cups. Add to gelatin, stirring until slightly thickened.  Remove
any unmelted ice. Measure 1-1/3 cups gelatin into small bowl; add melon.
Pour into individual dessert glasses or serving bowl.
WHIP remaining gelatin at high speed of electric mixer until fluffy, thick
and about doubled in volume.  Spoon over gelatin in glasses. Chill until
set, about 2 hours. Garnish with additional melon balls and mint leaves, if
desired.
MAKES 6 to 8 (1/2 cup) servings, Prep time: 10 minutes, Chill time: 2
hours
