Melon with Mint, Ginger And Orange

INGREDIENTS

1 Ripe melon; such as cantaloupe or Charentais, cut into thin slices
1 sl (1cm/1/2in) fresh root ginger; peeled and cut into thin strips
Grated rind of 1/2 orange
1 lg Orange ; juice of
Shredded mint leaves

INSTRUCTIONS

Melon was once a treat. We're blas. about it now, but a simply dressed ripe
melon is wonderful.
Preparation time:
15    minutes.
Arrange the melon on plates. Mix the ginger, orange rind and juice; drizzle
over the melon. Sprinkle over the mint. Can be made up to 6 hours ahead and
chilled. Remove from fridge 1o minutes before serving.
ORANGE RIND OPTION: Cut it into strips instead of grating, if you prefer.

trace, saturated fat trace, fibre 2g, added sugar none, salt 0.03g
