Mexican Fruit Cake

INGREDIENTS

2 c Sugar
2 c Flour
20 oz Crushed pineapple in juice; NOT drained
1/2 c Raisins
1/2 c Walnuts; broken
2 tb Baking soda

INSTRUCTIONS

Spray bundt pan with Pam or Baker's Joy. Mix all ingredients and spread in
pan. Bake at 350-degrees for 35-55 minutes. (Sherry's oven requires just 35
minutes, mine 55.)
Remove from pan. When cool, dust with powdered sugar, if desired.
NOTES : Based on 8 servings -- which is GENEROUS -- this has only 1.5 fat
grams (but 388 calories) per serving.
