Mexican Meat Balls

INGREDIENTS

500 g Minced beef; (1lb)
500 g Minced pork; (1lb)
2 Cloves garlic; crushed
50 g Fresh white breadcrumbs; (2oz)
1 tb Freshly chopped parsley
1 Egg; size 3
Salt and freshly ground black pepper
2 tb Oil
1 275 gram jar taco relish
50 g Cheddar cheese; grated (2oz)

INSTRUCTIONS

1. Mix together the meat and garlic, breadcrumbs, parsley, egg and
seasoning and shape into 16 balls.
2. Heat the oil in a frying pan and fry the meatballs in batches to brown
all over.
3. Transfer to an oven proof dish and pour over the taco relish. Cover and
cook in a preheated oven 180 C, 350 F, Gas Mark 4 for 30 minutes.
4. Sprinkle over the grated cheese and place back in oven uncovered and
continue cooking for a further 30 minutes.
