INGREDIENTS

1 c Tomatoes; chopped
1 c Green pepper. chopped
Little olive oil
1 Chopped onion
1 Lager; (same type/strength as a Fosters, maybe)
Cheese; (aged cheddar is what I use)
1 ts Each of coriander; cumin and cayenne
Little pepper

INSTRUCTIONS

I'm particularly fond of this nachos recipe from Moosewood - I even kid
myself it's healthy as it has tomatoes and capsicums in it!
Cook onions, add toms and pepper, and herbs, then add beer/lager. Simmer
till lager is right down (about 15-20 mins at the most) then take off heat
and add cheese, stirring until it's melted. Add to large plate of Doritos
plain tortilla chips and eat before it gets cool.
