INGREDIENTS

Vegetable cooking spray
1 99% fat-free condensed cream
of mushroom soup10 3/4
oz
1/2 c Skim milk
1 Diced pimiento, drained2oz
1/4 t Pepper
1 SPAM Luncheon Meat, cubed
12 oz
1 c Chopped onion
1/2 c Frozen peas
4 1/2 c Thinly sliced, peeled
potatoes
2 T Dry bread crumbs
1 T Chopped parsley

INSTRUCTIONS

Heat oven to 350'F. Spray a 2-quart casserole with vegetable cooking
spray. In medium bowl, combine soup, milk, pimiento, and pepper. In
casserole, layer half of each of SPAM, onion, peas, potatoes, and
sauce. Repeat layers. Cover. Bake 60 minutes or until potatoes are
nearly tender. Combine bread crumbs and parsley; sprinkle over
casserole. Bake, uncovered, 15 minutes longer or until potatoes are
tender. Let stand 10 minutes before serving.
