INGREDIENTS

2 T Butter
2 T Olive oil
2 1/2 lb Red potatoes, sliced
3 T Chopped fresh thyme
1 T Minced garlic
1 1/2 c Chicken broth

INSTRUCTIONS

Melt butter with olive oil in large heavy skillet. Add potatoes,  thyme
and garlic. Sprinkle with salt and pepper. Add broth and bring  to a
boil. Reduce heat, cover and simmer until tender, stirring
occasionally. Add more broth, if necessary. Yield: 6 servings.
