New Steaks With Black Bean Relish

INGREDIENTS

1 1/2 c Cooked black beans
2 t Vegetable oil
1 Red onion, diced
3 Cloves garlic, chopped
2 Fresh jalapenos, diced
2 Roasted red peppers, peeled
and diced
1/4 c Balsamic vinegar
1/2 t Chopped cilantro
1 t Chopped basil
1 t Cumin
Salt and black pepper to
taste
1 T Olive oil
4 New york steaks, 6 ounce
Salt and pepper to taste

INSTRUCTIONS

For the relish, place cooked black beans in a large bowl. In a large
saute pan heat oil until very hot. Add red onion, garlic, and diced
jalapenos and saute until you can smell the aroma about 1-2 minutes
over high heat. Add the roasted red peppers and vinegar. Bring to a
boil and add cilantro and basil. Season with cumin and salt and
pepper. Pour over beans and toss well. Let cool to room temperature.
In a large saute pan heat oil until smoking hot. Season the steaks
with salt and pepper. Put the steaks in the pan and sear both sides
well about 2-3 minutes. Place in a350 degree oven and cook about 4-5
more minutes for medium rare doneness depending on thickness. Remove
from the oven place on a bed of  Converted by MC_Buster.  Per serving:
