INGREDIENTS

1 pk Frozen chopped spinach; drained well
1 lg Onion; chopped
3 tb Butter or margarine
3 Eggs
8 oz Feta cheese; crumbled
1 c Cottage cheese
Pepper; to taste
4 md Red and yellow peppers; halved vertically
1/2 c Grated Parmesan cheese

INSTRUCTIONS

Preheat oven to 375 degrees. Defrost spinach. Drain well. Saute onion in
butter until tender. Beat eggs together. Stir in spinach, and mix together.
Stir in feta cheese, cottage cheese, sauteed onions, and black pepper to
taste. Clean peppers (red and yellow) -- remove stems, seeds, etc. Cut
peppers in half lengthwise (vertically). Fill peppers with spinach mixture
and place in buttered casserole pan Sprinkle top of peppers with Parmesan
cheese. Bake in 375 degree oven for 30 minutes.
