INGREDIENTS

16 oz Package wide egg noodles
4 Eggs; depending on size of eggs you use (up to 6)
1/3 c White sugar and 1/3 cup light brown sugar, mixed together
1 tb Plus 1 teaspoon ground cinnamon
1 c Light or dark raisins
1/4 c Unsweetened apple juice
2 Apples (your choice of kind) peeled, seeded, cored, and very thinly sliced
Vegetable oil cooking spray

INSTRUCTIONS

Pre-heat oven to 350 degrees. Cook noodles according to package directions,
drain well and set aside. Beat the eggs and sugar together by hand, then
add the cinnamon and mix well. Add in raisins, apple slices, and juice. In
a larger bowl, combine the egg and fruit mixture with the cooked noodles
and mix well. Spray bottom and sides of a 13" x 9" glass pan, then pour in
noodle mixture. Spread mixture evenly through pan. Bake at 350 degrees for
30-45 mins, or until top of noodle kugel is slightly browned. You can also
test for doneness like with a cake. Toothpick inserted in center--if it
comes out clean, it's done. You can serve this kugel hot, cold, or at room
temperature. Cut it into squares for serving. Make 24 servings.
Notes: Sometimes I play around with the spices in here and add 1/4 -1/2
tsp. ground cloves and 1/2 tsp. of nutmeg, depending on taste.
