INGREDIENTS

1/2 c All-purpose flour
1/2 ts Baking powder
1/4 ts Baking soda
1/4 ts Salt
1 ts Ground cinnamon
1 tb Vegetable shortening
2 tb Unsweetened applesauce
1/4 c Granulated sugar
1/4 c Light brown sugar
1 Egg white
1 ts Vanilla extract
3/4 c Rolled oats
1/4 c Raisins

INSTRUCTIONS

Directions: Preheat oven to 375° F. Line a cookie sheet with parchment
paper or lightly spray with a nonstick vegetable cooking spray. In a large
bowl, combine the flour, baking powder, baking soda, salt and cinnamon. Mix
well. In another bowl, whisk together the shortening, applesauce,
granulated and brown sugars, egg white and vanilla extract until the
shortening breaks into gravel-like pieces. Add the flour mixture to the
applesauce mixture. Mix well. Fold in the oats and then the raisins. Drop
rounded teaspoonfuls onto the cookie sheet 2 inches apart. Bake for 10 to
12 minutes, or until a golden brown. Remove from the oven and cool on the
cookie sheet for 5 minutes. Remove from cookie sheet and place on a rack to
cool. Makes 16 cookies.

mg chol., 70 mg sodium.
