Okra, Tomato and Onion Stuff

INGREDIENTS

1 c Okra
1/4 c Onions
1 c Tomatoes
4 lg Eggs
1 ts Salt (I use a combination seasoned salt-it just seems to need more seasoning)
1/2 ts Black or red pepper-really this is good with a can of chopped chilies.

INSTRUCTIONS

My Aunt Helen was the younger Aunt-she was better educated and alittle more
"uptown" as the other Aunts would comment. She became a nurse and EVEYONE
was expected at her Capping-so we went. Now, this is one of favorite
secrets, we would propably call it a type of simple Souffle-THE Aunts said
(and Mother said it also) "Helen would not have known how to make this had
she not have gone out in the world and come back with more ideas) She died
in 1990-78yrs. She and my Mother died in the same Hospice room.
My husband likes lots of black pepper-you will just have to adjust to your
own taste. Saute okra and onion in oleo or oil for abt 1 min. Add tomatoes
(slightly beaten-I add abt 2 teaspoons milk to the eggs) salt and pepper.
Pour into well oiled pan (or sprayed) Bake at 350 for abt 20-30 mins.
Sprinkle with shredded cheese on top and return to oven til it melts a bit.
My Aunt Helen went on to be quite a more modern cook-using a lot that she
learned to inspire her sisters to branch out and try other forms and types
of cooking.She spent her life nursing others and died a very painful death
with breast cancer. Never had herself checked, so get your checkup-it is
not a pretty way to die. Tootie Best of the Southwest cooking -or we are
