Old-Fashioned Potato Pancakes

INGREDIENTS

3/4 c Pancake mix
3/4 ts Salt
1 c Milk
1 Egg; beaten
3 tb Melted butter
2 c Grated; peeled potatoes
1/4 c Finely chopped onion

INSTRUCTIONS

Place pancake mix and salt in a large bowl. Add milk, egg and butter. Stir
until batter is fairly smooth. Stir in potatoes and onions. For each
pancake, pour about 1/4 cup batter on a lightly greased hot griddle. Bake
to a golden brown, about 4 minutes for each side. Turn only once. >From
