One-Dish Sausage Jambalaya – Chatelaine

INGREDIENTS

2 Italian sausages; coarsely chopped
19 oz Tomatoes; undrained
1 1/2 c Long-grain rice; uncooked
1 ts Basil; (or 2-4 tbsp fresh)
1 Red pepper or zucchini; chopped

INSTRUCTIONS

1.  In large wide saucepan over med-high, brown sausages (8 mins) and drain
fat.
2.  Add tomatoes, breaking with fork.  Stir in 2-1/2 cups water, rice, and
basil.  Stir in 1/2 tsp salt.  Cover and bring to boil.  As soon as mixture
starts to boil, reduce heat to low and simmer for 20 mins, stirring once.
3.  Stir in pepper, cover, and simmer 5 mins.
Jazzy Cajun Stir-In: Instead of basil, use 1 tsp chili powder, 1/2 tsp each
dry mustard, leaf thyme and garlic powder, and 1/4 tsp pepper.  Truly
fiery, add 1/4 tsp cayenne.
