Onion Cheese Puffs

INGREDIENTS

1/2 sm Yellow onion
1/2 c Mayonnaise
3 tb Freshly grated Parmigiano-Reggiano
2 tb Finely chopped fresh parsley
Salt and freshly ground pepper, to taste
8 sl White bread

INSTRUCTIONS

Preheat oven to 350 degrees.
Peel and finely chop small yellow onion and mix with mayonnaise, freshly
grated Parmigiano-Reggiano, and finely chopped fresh parsley in a medium
bowl. Season with salt and freshly ground pepper.
Remove crusts from 8 slices of white bread. Using a 1-inch round cookie
cutter, cut bread into 32 rounds. Place on a cookie sheet and bake, without
turning, until golden, 10-15 minutes.
Preheat broiler. Spread about 1 teaspoon onion mixture onto each round,
then sprinkle with more Parmigiano-Reggiano and brown under broiler for 1
to 2 minutes. Serve immediately.
