Onions Stuffed with Sweet Potatoes

INGREDIENTS

6 lg Onions, yellow, peeled
1 c Sweet potato, pureed
1/2 ts Nutmeg
Salt to taste
Pepper to taste
2 tb Butter
2 tb Honey

INSTRUCTIONS

Preheat oven to 350°. Peel onions and boil in salted water to cover for
15-20 minutes or until onions are tender but not falling apart. Keep a
close eye on them. Cool slightly and take out centers. Save for a soup. Mix
sweet potato puree with remaining ingredients. Stuff centers of onions with
potato. Put onions in baking dish with a quarter inch of water in bottom.
Bake onions for 30 minutes.
NOTES : This is so different and so good!
