Orange Couscous

INGREDIENTS

1 3/4 Orange juice
1 c Uncooked couscous
1/3 c Chopped dried apricots or dried pineapple
1/4 c Raisins or cranraisins
1 ts Ground cinnamon
1/8 ts Ground ginger
1 tb Honey
1/2 c Water

INSTRUCTIONS

Bring 1 1/2 cups orange juice to a boil in a small saucepan.Stir in
couscous and remove from heat, cover, and allow to stand for 5 minutes.
Heat remaining 1/4 cup orange juice in another saucepan. Add apricots ( or
pineapple ), raisins, honey and cinnamon and ginger and saute for 2 or 3
minutes. combine couscous and fruit mixture and spoon into serving bowls if
serving at once. Makes 3 servings. You can also pack the mixture into a 3
serving size container and refridgerate. Upon chilling it will turn into
the consistency of a packed bread pudding. YUM !
