Orange Nut Bread

INGREDIENTS

1 md Orange
1 c Raisins (or substitute 3/4 cup chopped cranberries)
2 tb Melted butter
1 ts Vanilla
1 Beaten egg
2 c Flour
3/16 ts Salt
1 ts Baking powder
1/2 ts Baking soda
1 c Sugar
1/2 c Nuts

INSTRUCTIONS

Squeeze juice from orange into 8 oz measuring cup; add boiling water to
fill. Blend orange rind in food processor with raisins. Add orange juice.
Stir in shortening, vanilla and egg. Add dry ingredients and beat well.
Stir in nuts. Bake in wax-paper lined loaf pan at 350 degrees for an hour.
