Orzo with Spinach and Feta Cheese

INGREDIENTS

1 c Orzo pasta
1 1/4 ts Olive oil
3/4 md Onion; minced
7 oz Frozen chopped spinach; thawed and well drained
2 tb Feta cheese; plus 2 tsp. ,crumbled
Freshly ground black pepper; to taste

INSTRUCTIONS

Cook the orzo according to package directions. Drain. Heat the oil in a
skillet over medium high heat. Add the onion and saut. for 5 minutes. Add
the spinach and saut. for 4 more minutes. Toss the onion spinach mixture
with the hot orzo. Add the feta cheese and ground pepper and toss well.
Serve immediately.
Per serving: calories 177, fat 6.0g, 30% calories from fat, cholesterol
17mg, protein 7.7g, carbohydrates 23.8g, fiber 2.5g, sodium 256mg.
