INGREDIENTS

4 1/2 c Flour
2 1/4 ts Baking powder
1/4 ts Baking soda
2 1/2 c Sugar
1 1/4 c Vegetable oil
1/2 tb Salt
1/2 c Orange zest

1 1/4 c Evaporated milk
1 1/2 tb Orange extract
1/4 ts Orange food coloring
1/4 ts Yellow food coloring

INSTRUCTIONS

Sift together flour, baking powder, baking soda, sugar and salt. In a
separate bowl combine eggs, orange zest, vegetable oil, corn syrup, water,
evaporated milk, orange extract and food colorings. Add to dry mixture,
stirring only until moistened. Pour into 2 well greased loaf pans and bake
at 350 degrees F for 50-60 minutes. NOTE The list of ingredients was given
to me by the Islander Coffee Shop manager, Roy. He didn't have time to give
me the method, sooo, I have developed the method using my Orange Muffins
recipe, which uses basically the same ingredients. Test for doneness in the
usual way.
