Oven Baked Tiger Prawns in a Black Bean Sauce

INGREDIENTS

2 lb Uncooked; shelled tiger
; prawns – fresh or
; frozen
2 Red peppers; de-seeded and
; thinly sliced
3 Leeks; thinly sliced
2 Bottles; (150g each) black
; bean sauce
4 tb Soy sauce
2 Handfuls fresh chopped coriander

INSTRUCTIONS

If using frozen prawns, de-frost first. Mix all ingredients together,
except half the coriander, and put in an oven-proof dish. Cover and leave
to marinate for at least 30 minutes. This dish may be prepared up to this
point earlier in the day.
Put in oven at 190C/375F/gas 5 covered with foil, and cook for 40 minutes,
tossing half way through. Serve on a bed of noodles and sprinkle with
remaining chopped coriander.
Cook's tip: if you cannot find uncooked prawns, then the cooked ones will
do. The same cooking time applies to cooked or uncooked prawns. Uncooked
prawns are a greyish colour and turn pink when cooked. They will give a
slightly better flavour to this dish.
